Egg Koithio is a dish made out of rice. It is a cooked Rice noodles with eggs. you can make this by just getting the rice noodles from one of the supermarket nearby or prepare everything at home like me [preparing @ home will take long time say 40 - 50 mins].. I like to cook food and try out new things. I first had koithio in one of the hotels and liked the taste of it so came home and tried, here is how to make Koithio. I made Egg Koithio for the first shot it turned out good, will come up with something different next time..
Ingredients:
2 Cups Rice flour.
1 cup Maida flour.
3 Tablespoons of Oil.
2 Medium Onions.
5 Eggs.
Salt to Taste.
1/2 tablespoon of Pepper.
Preparation Method:
Step 1: Knead a dough with the Rice and Maida. You will need a big flat surface to flatten the dough, the thickness of the dough should be about 2 mm, thicker will not cook evenly and thinner will tend to break.
Step 2: Cut the dough into long strips and dust them with dry flour.
Step 3: Boil about 2 jugs of water in a pan with 1 tablespoon of salt. Once the water is rolling boil add 2 tablespoons of oil and then put the noodles in the water and cook them for about 3 - 4 mins.
Step 4: Take the noodles out and shock them with cold water. Sprinkle some oil and toss the noodles, keep it aside.
Step 5: In a Heavy bottom pan heat 1 tablespoon of oil and add the diced onions and salt. saute till the onions are translucent.
Step 6: Crack the eggs to the Pans and keep stirring till the eggs are cooked, mix the pepper with the eggs.
