Capsicum Curry...

 Most of the time I wonder what to do with the capsicum and this recipe is courtesy of my wife. This is one of the easy and quick recipes. Nice and sharp flavor of the capsicum and can go with most of the dishes main or side....
Ingredients:
1 Big Capsicum.
2 Small Tomatoes.
1 Medium Onion.
3 cloves of Garlic.
Little Coriander leaves for seasoning.
1/2 tablespoon of Oil.
Few Mustard seeds.
Few Curry leaves.
1/4 tablespoon of Chilli powder.
A pinch of Turmeric powder.
Salt to taste

Preparation Method:
Step 1: Cut open the Capsicum and clear the seeds off.

Step 2: Heat the oil in a pan and add mustard seeds, once they pop add the curry leaves and sliced onions and saute.


Step 3: Once the onions are translucent add the chopped tomatoes and saute for a minute. Then add salt, chilli powder, turmeric powder and chopped capsicum.

Step 4: Mix all together and add a little water. cook in low heat covered for 5 mins.


Step 5: Once the casicum is cooked, turn up the heat and let the water to reduce. Now add the chopped coriander leaves and turn off the heat.

 
 The Capsicum curry is ready and can be severed with roti, dosa, idly, rice and even put it between breads and you get a nice sandwich Indian style ;p.. Happy Cooking!!!
