Biryani #1... Grind n Mix...

 There are quite a few varieties of briyani. I know to make a few and will share it. the first one is Grind n Mix and L call it "Green Biryani", yes this one is green in color and still tastes real good. this on is easy to make and the Meat can be replace with veggies. Look at the notes below for more details.

Ingredients:

1/2 kg of chicken [Vegs in below note].
2 cups of Rice [Basmati\Seeraga samba].
Small bunch of Mint [Pudina].
Small bunch of Coriander leaves.
1/2 inch of Ginger.
5 cloves of Garlic.
Spices [See Step 2].
5 Green Chilli for heat. [add more or less depending on your taste].
200 grams of sliced Onions.
3 Tablespoon of Oil.
Salt to taste.

Preparation Method:

Step 1:
Grind the mint, coriander leaves, green chilli, ginger and garlic into a fine paste.


Step 2:
Spices - Top row from left to right: Cinnamon - 1/2 inch, Nut mace - 2, Cumin seeds and Cardamom [i use black cardamom this can be replace with green cardamom].
Middle row: Star Anise, Marathi Mokku and Cloves.
Last row: Fennel Seeds, Kalpasi, Dried Rose petals and Peppercorns.


Step 3:
In a Heavy Bottom Pan heat the oil in medium heat and add all the spices along with a Basil leaf.
Step 4:
Add the sliced onions and saute till they are translucent. turn the heat to low.


Step 5:
Now add the paste to onions with salt and cook it till you don get the raw smell of the paste.
Step 6:
Now add the Chicken pieces to the paste and mix it well. cover the pan and leave it for few mins till the chicken is half cooked.







Step 7:
Add the mix to the Chicken and enough water for the rice to be cooked. Cover and cook till the rice is puffed up.


 Now you get the Green Biryani hot and ready to served, this above mentioned quantity can serve 3 - 4 people. Serve it along with Onion Raitha.

Note for Veggies: the amount of vegetables can be added - Carrots - 100 grams, Beans - 100 grams, Cauliflower - 100 grams, Peas - 100 grams, Potato(optional) - 100 grams and Soya chunks a.k.a Meal Maker(optional) - 100 grams. Preparation methods is the same. Happy Cooking!!!
